Stabilizer Blends
Additives ServiceStabilizer groups generally act as water binders and are used as a structure regulator in the final product. They are used especially in dairy and meat products and also for a smoother structure compared to starch groups. Where starch use is not appropriate, such as beverages, they are widely used with guar, xanthan, gellan and konjac.
